Pumpkin Spice Cupcakes Review
Imagine this: You have an event coming up, let’s say a party, or maybe you want to celebrate it being fall, or a Friendsgiving. Instead of going to the store and just buying pumpkin cookies, why not make them yourself? If you’re in need of a cozy fall treat, here’s how to make pumpkin spice cupcakes!
Dry Ingredients:
1 Cup of all-purpose flour
1 teaspoon of baking powder
½ teaspoon of baking soda
½ teaspoon of salt
1 teaspoon of ground cinnamon
1.5 teaspoons of pumpkin spice
¾ cup of packed brown sugar
A dash of allspice seasoning
Wet Ingredients:
½ cup of vegetable oil
2 large eggs
1 cup of canned pumpkin puree
1 teaspoon of pure vanilla extract
Directions:
- Preheat the oven to 350°, put cupcake liners in a cupcake pan (12 cupcakes).
- In a large mixing bowl, whisk together all your dry ingredients other than the brown sugar and the allspice seasoning. In another bowl, whisk together all the wet ingredients and the brown sugar.
- Pour the wet ingredients into the dry ingredients and mix until combined. While combining, put in the allspice seasoning. The batter will be thick.
- Pour the batter into the liners, pour until the liners are ⅔ full to avoid spilling. Bake for 20-22 minutes. To test if they’re done, put a toothpick in the center. If it comes out clean, it’s ready; if it comes out wet, it needs more time. Another way to check if you don’t have a toothpick is to gently place your finger on the center. If it bounces back, it needs more time, but if it stays firm, it’s ready! Let cool completely before frosting.
I used store-bought cream cheese frosting when I made these because I forgot to buy cream cheese, but if you want to make your own frosting, this is the recipe I normally use:
- In a mixer, combine 8oz of cream cheese and ½ cup of butter together, then add in 1 teaspoon of vanilla extract and ⅛ teaspoon of salt once they are fully combined. Then, slow down the mixer and slowly add 4 cups of powdered sugar into the mixture (a scoop at a time) until it’s all fully combined.
- Once the cupcakes are fully frosted, dash cinnamon or pumpkin pie seasoning on top of the frosting.

Making these cupcakes was fun, especially because I made them with one of my friends. The allspice seasoning is a twist I threw on them because I just felt like it needed something extra. Everyone who tried it enjoyed that twist. So if you’re making these at home, don’t be afraid to throw your own twist onto it! I brought 12 cupcakes to school, and they were gone fast! People loved the texture and the perfect combination of the sweetness and spice. My favorite part was seeing people’s reactions to eating the cupcakes, as they were just immersed in the fall spirit.
